The updated edition suggests using paprika instead of food colouring suggested in the original edition on the tandoori chicken This is good because my husband is allergic to food colouring. Butter chicken is so flavourful and rich so are the samosas! The naan is the most pillowy naan I’ve ever had! I looove it! The butter chicken is listed as “chicken in butter sauce”

Excellent introduction to Indian cooking.
Easy to follow recipes. Great explanations about spices, methods, ingredients and insights to Indian culture. I’ve been a fan of Indian cuisine for a long time but never tried to make it myself. This made it easy.

Excellent first Indian cookbook for anyone
Excellent book. The recipes are pretty fool proof. Don't be scared off by the long list of ingredients - Indian cooking is based on a set of whole spices and a set of ground ones, and those are what repeat through the seemingly long ingredient lists. However once you have the most common ones stocked, it's a breeze. This is one of the best basic Indian cookbooks ever written, and for a Western audience which makes it even better. Find an old copy and buy it!

This book has excellent curry recipes. I use it for most of my curries. Probably the most used cookery book in my collection.

Truthfully have not yet used it - but things are well laid out and we are excited to use this cook book to learn authentic Indian cuisine!!

A must in your library of cooking books
It is many years ago (some say decades) when I bought a cook book from this author. And the most recent purchase confirms my initial view. One of the best in the category and I give this book my best recommendation.It may lack something new following worldwide trends.

I ordered mine from the bbc back in the 80's and have used it ever since. It was pilfered recently, so I had to replace it. They used to have all the full episodes loaded on youtube but, sadly, they've disappeared.

Awesome Indian cookbook
It’s my first Madhur Jaffrey cookbook and I love it. There are so many things I want to cook immediately. Her descriptions are so good that you can’t help but want to cook them. She is the queen of Indian cooking and this is a book that I just had to have. I think anyone buying it would be very happy with the purchase

A perfect book for the wannabe Indian cook
This is a very good book on indian cuisine. Madhur Jaffrey makes a very good job in explaining several details about the ingredients: for instance, the book begins with a list of spices, which explains what they are and how they are used and of cooking techniques, which often give your dishes that "little thing that was missing".The book is helpfully divided into chapters with different main ingredients: meat, chicken, fish, vegetables, pulses, breads, rice, relishes/chutneys/pickles, soups/snacks/savouris and sweets. Recipes are clearly written and easy to follow... and the results extremely good (I think her recipe for sour chickpeas, Khatte chhole, is now amongst my favourite ones!).Even more, the author suggests a menu at the beginning of each recipe, so you can match different recipes from the book and have a nice complete Indian meal.Only little thing is that sometimes I feel like the recipes go a bit too heavy on oil/fat, but that is easily adjustable to have a lighter, but still very good version of these beautiful dishes.
